The
main part of any Malagasy meal is rice. It is a staple food in
Madagascar and everything they eat is added to it, such as meat,
fish or poultry.
Popular dishes are romazava, which is beef and vegetable stew spiced with ginger, and ravitoto, which is pork stew with manioc greens. Often a meal will be accompanied by achards, a hot, pickled vegetable curry.
There
is excellent seafood available along the coastal areas. Fresh
vegetables and fruit (voankazo) are plentiful. Fruits such
as lychees, pineapples, mangoes and bananas are available almost
year round.
After so many
years of French influence, baguettes
(French
bread) is easily available everywhere. Another aspect of French
influence is that the coffee is excellent, and available everywhere
also.
